So I’ve been a pescatarian for the last year, trying to stay as close to vegetarian as possible but man do I love me some seafood. It can be challenging and hard to stay dedicated especially this time of year with Superbowl so close. I recently stumbled upon this book at Target (everyone’s favorite place, I mean Beyonce can’t even resist) and am digging the recipes. I find a lot of vegetarian and vegan cookbooks can have a lot of complicated recipes. Whereas this new book has a TON of simple & delicious recipes, a lot that I feel you can even substitute seafood, dairy or even meat in if you like.
